SPICY JALAPEÑO-SPINACH DIP
Mission®Thin & Crispy Tortilla Chips
1 Tbsp. Vegetable oil
½ cup Red onion, diced
3 Jalapeños, seeded and diced
2 Garlic cloves, minced or pressed
1 cup Sour cream
1 cup Mayonnaise
1 cup Mozzarella, shredded
½ package (10 oz.) Frozen chopped spinach, thawed and well-drained
½ cup Parmesan, shredded
1 Roma tomato, finely diced
- Preheat oven to 375˚F.
- In a medium skillet heat oil over medium. Add onion, jalapeño, and garlic and sauté until softened, about 5 minutes.
- In a medium bowl mix together sautéed onion mixture, sour cream, mayonnaise, mozzarella, spinach, Parmesan, and tomato until smooth.
- Transfer mixture to a shallow, ovenproof baking dish and bake until browned and melted, 20-25 minutes.
- Serve immediately with Mission® Thin & Crispy Tortilla Chips.
